How does a coffee shop get started? The goal was never to make big bucks but just to make enough to hire some people, make enough to live simply and take a day off now and then.  Dawn and I moved to Grand Junction hoping to open an art supply store but, alas, the banks wouldn’t loan us the money.  We pursued other jobs in Junction and periodically poured out our woes to a local coffee shop owner near our house.  One day the owner said: “hey, how would you guys like to own a coffee shop?”  Being the suckers we were
we said: “Sure, why not? We know absolutely NOTHING about owning a business or about making coffee.”  On October 15th, 2002 we took over the business and changed the name to The Coffee Studio.  The name evolved from our desire to have a coffee shop that also incorporated art.  Dawn is a spectacular fine artist and we wanted a place for her to show her works as well as other artists in the Valley.


The first few months were quite a learning curve for us!  We had to find our own voice in the coffee shop world.  We sampled gallons of coffees and products and used some faithful customers as guinea pigs to taste our creations.  Coffee taste is a VERY subjective personal preference.  Dawn leaned toward the more robust, dark, strong brews and Kellie preferred the lighter, more subtle roasts.  In the end we decided to make sure we had a variety everyday for people.  Who knows what a person will prefer on any given day?  The same coffee can be too weak for one customer but the next customer thinks it’s the boldest best coffee they have ever tried.  We made it one of our top goals to NOT have any products that resembled our next door chain competitor.  We drew the line at burnt roasted beans.

As with our coffees our espresso is a testament to the trial and error we went through when first attempting to learn what good versus bad espresso meant.  We settled for a medium roast on our espresso.  Most shops go for the dark roasted espresso beans but not TCS.  We believe the espresso in a latte should enhance the flavors not overpower as darks can often do.
